paninis on the dinner menu...while we wait

While we wait for Bundle, there will be lots of things to do.

Including one of my favorite past times....EAT! ;-P

So, I consider myself a very good cook, and baker, but tonight I got the words "exquisite" and "perfect" from my darling husband. whoot~whoot!!
On the menu? Homemade Caprese Paninis (mozz, tomato, basil leaves, ginger dressing, & evoo on wheat Italian loaf, hand pressed) served with hand cut and baked sweet potato fries (MMM!), with fresh grapes on the side.




The picture above is from food.com which is actually not where I got my somewhat made up recipe, but had this great picture that looks a lot like our paninis this evening. Mouthwatering, right? (and I don't mind giving a shout out to food.com, because they do have awesome recipes!)

Here, about.com, I found some inspiration.

And for dessert? From-scratch blueberry-walnut-blondies.

I have to say, it was delish!

I do that as an Adoptive Mom I do not work for Holt but I am so glad that we went with them for so...many reason. However, I read that you are having trouble meeting the weight requirement. I am up to date with many countries which do not have that requirement. Taiwan is one of those countries. Heart Sent Adoptions is the best Taiwan Agency to deal with they have a strong relationship with St. Lucy which is the main Orphanage of 3 in Taiwan. What is nice about Taiwan is children are in Foster Care as opposed to an orphanage. Thank you both, Birdie and Kathy for your comments. :) Kathy, I am a little "chubby" I will say, hee hee, yes, I certainly am. but I don't think my weight will be a problem per se, our criteria issues stem from other things including that we are married only over 2 years, and my husband's age. But I just now (within minutes) got some very good news from your friends at Holt, and it sounds like if we can simply work out a couple of details that we can go ahead and apply in confidence. I would be very excited to talt to you more, and will email you. I am signed up for two webinars coming up on 2/22 and 2/24. :-D))
